Ennet Moholisa obtained PhD in Food Science in 2015. 

Fields of Expertise

  • Food Science & Technology: Food safety, shelf life, functional foods, processed meat products.
  • Food Safety & Consumer Health: Focused on ensuring meat and meat products meet safety standards and consumer expectations.
  • Animal & Meat Science: Carcass quality, sensory evaluation, meat processing, authenticity testing
  • Legislation & Policy Research: Contributed to national regulations on brine inclusion in frozen chicken and involved in the projects reviewing  the South African Beef Carcass Classification System.
  • Innovative Utilisation of Meat Resources: Researching the use of fifth quarter meats (intestines, organs, blood) in processed products and exploring underutilised sources such as goat and indigenous chicken.
  • Agro-Processing & Value Addition: Actively engaged in projects that enhance rural development and food sustainability through agro-processing initiatives.

Work Experience Highlights

  • ARC – Animal Production Institute
    • Conducted groundbreaking research that informed South African legislation on brine inclusion in frozen chicken.
    • Involved in review of the Beef Carcass Classification System, ensuring alignment with industry needs and consumer expectations.
    • Currently spearheading projects on alternative meat sources and fifth quarter utilisation, contributing to sustainable meat processing practices.
    • Collaborates on agro-processing projects aimed at improving food security, rural livelihoods, and innovation in meat product development.
  • International & National Engagements
    • Organising Committee, Regional Workshop on Food Loss & Waste (2025, Pretoria)–attended all the meetings and involved in program development, some logistics, communication and out reach.  Coordinated the ARC team participants and facilitated a group discussion on slaughterhouse blood re-use
    • Technical Team, G20-MACS Agricultural Chief Scientists Meeting (2025, Polokwane)–involved in write all workshops, scriber for the thematic priority:  Transformation of Agrifood Systems and Supported technical agenda
    • Rapporteur, Gauteng Agro-Processing Convention & Expo Summit (2025, Johannesburg)–involved in the  synthesis of  key outcomes and report writing
    • Guest Lecturer, University of Johannesburg (2023) – Delivered lecture on processed meat products to postgraduate students.
    • Congress Chair, SAAFOST Biennial International Congress (2019) – Led congress session on food security, nutrition, and well-being.
